Davis & Adams helped pioneer the commissary kitchen in San Diego, building some of the region’s first large-scale, multi-tenant food production facilities and helping local agencies write the playbook for approving them. Across projects for Reba’s Kitchens, Hancock Kitchens, and Maker Kitchens, we’ve delivered 88 commercial kitchen suites and the heavy utility infrastructure behind them: grease systems, commercial exhaust, cold storage, and major electrical and gas service upgrades.
Feature Project: Hancock Kitchens Commissary Facility

Davis & Adams Construction completed a $2.4 million design-build conversion of an existing 13,200-square-foot industrial facility into a state-of-the-art commissary kitchen complex - delivered during the height of the COVID-19 pandemic. The project created 28 commercial kitchen suites, including 21 hot kitchens and 7 cold-production kitchens, supporting a diverse range of food service operators.
As design-build contractor, Davis & Adams managed planning, design coordination, permitting, utility coordination, and construction. The facility incorporates commercial kitchen exhaust, refrigeration, food-service plumbing, grease waste systems, walk-in cold storage, and specialized utility distribution to every suite - plus a new fire sprinkler system throughout the previously non-sprinklered building, electrical and gas service upgrades, water meter upsizing, and a new sewer connection.
The team overcame pandemic-era supply chain disruption, a mid-project SDG&E service redesign requiring new switchgear configuration, a gas upgrade that took over a year of utility coordination, and a regulatory landscape the City and County were still writing for multi-tenant commissaries. The result: a scalable, code-compliant food production facility supporting dozens of independent food businesses.
